Derbyshire meets Spain in Casa cook book

mi casa - Steve Perez's new cookbookAn appetising cook book has been published by entrepreneur, farmer, rally driver and hotelier Steve Perez.

Speaking at last night's launch event at his four-star Casa hotel, in Chesterfield, Steve described mi casaas a taste of "Derbyshire meets Spain".

In addition to a collection of some of the tantalising dishes served in the hotel's restaurant, Cocina, mi casa also tells Steve's story from being the son of a local restaurateur to owning officially the fifth-best hotel in the UK (according to TripAdvisor).

The recipes in mi casa draw on influences from Steve’s Spanish ancestry and include dishes inspired by Steve's Derbyshire upbringing and his passion for high quality local produce.

Much of the food used in the kitchens at the Casa hotel, including beef and eggs, come from Steve's farm three miles away or other very local suppliers. The cattle are slaughtered only a mile from the farm.

mi casa also showcases the skills of the two AA rosette kitchen team at the Casa hotel and of Head Chef Andrew Wilson.

"It might be my book but mi casa isn't just about me, it was a collaboration by the whole team here," Steve told his guests.

mi casa has been written to suit the skills of both novice and adventurous home cooks.

For Steve Perez, the book marks his latest venture into the food, drink and hospitality industry.

He said: “I’m delighted to have a platform in mi casa to celebrate my love of food. Not only is it a great way to recognise some of the fantastic local food produce available in Chesterfield and surrounding areas, it’s also an opportunity to inspire readers to add a taste of Spain to their dishes too.

“My late Father Santiago, originally from Barcelona, inspired me throughout my career. I grew up in the Derbyshire countryside with him cooking Spanish dishes in the home. When it came to building the Casa hotel, I wanted something which would reflect my Mediterranean roots and the same holds true for the mi casa cook book.”

Throughout the past 40 years Steve has successfully carved a career for himself in the hospitality industry, from working as a boy in the kitchen of his father’s restaurant, moving from managing pubs to developing the hugely successful international drinks business Global Brands.
